Australian who loves cooking, travelling, drinking wine and trying different cuisines from around the world. My favourite cuisine to eat is middle eastern and love incorporating global flavours into French, Italian and Spanish food.

My passion is cooking food for other people, using great produce and finding ways to combine them to create unique dishes. I love trying different food from around the world and finding unique ingredients to incorporate into new culinary creations. I also enjoy teaching others how to cook.

my experience

I have been a chef for 23 years

I learned to cook in Sydney, mostly in small neighborhood, Produce driven restaurants where I had the privilege of working with many talented chefs from around the world who have taught me so much of what I kow now, now I have my own restaurant and I enjoy teaching the next generation of young chefs.

I sailed the Mediterranean sea

In 2012 I worked on a small private yacht based in Mallorca and traveling around the Mediterranean, where I fell in love with Mediterranean cuisine. While working on the yacht, I travelled to Corsica, Sardinia, St Tropez, Ibiza and the Amalfi coast.

I have been cooking in Vietnam for the last 5 years

In 2015, I left Australia permanently and have worked in Malaysia, Cambodia, Laos and Vietnam. Saigon is now where I call home.

A neighborhood Bistro In Binh Thanh District Saigon, serving Contemporary Mediterranean. Serve designed for sharing and to be enjoyed with good wine. Fiftysix is the first restaurant I have owned and it’s a true chefs restaurant, all about the food and experience.
